Group Bars Manager

Fallow is looking for a Group Bar Manager to lead and develop the bar operations across four of our restaurants.

This is a senior, hands-on role for someone who is passionate about drinks, obsessed with standards and excited by the opportunity to shape a growing hospitality business. You’ll take ownership of the bar operation across the group — from drinks development and team training to stock, margins, supplier relationships and service standards. Just as importantly, you’ll help us build bars that feel as considered, energetic and memorable as the food and hospitality Fallow is known for.

We’re looking for someone who can move comfortably between the creative and commercial sides of the role. Someone who can develop a brilliant drinks list one day, coach a bar team the next, and then get into the numbers to understand where we can improve.

The role

Working across four Fallow restaurants, you’ll be responsible for:

• Leading the bar strategy and standards across the group
• Developing exciting, relevant and commercially successful drinks menus
• Ensuring consistency in cocktails, spirits, wine, beer and non-alcoholic drinks
• Training, coaching and developing bar teams at every level
• Supporting the recruitment and progression of talented bar professionals
• Managing GP, stock, wastage, ordering and controls
• Building strong relationships with suppliers and brand partners
• Working closely with General Managers and restaurant leadership teams
• Driving bar sales while protecting quality and guest experience
• Keeping Fallow ahead of drinks trends without chasing trends for the sake of it
• Being present in the restaurants, leading from the floor and setting the standard

About you

• You’ll have a strong background in high-volume, quality-led bars or restaurants and ideally some experience working across multiple sites.
• You understand what makes a great bar commercially, but you’re equally passionate about hospitality, product and people.
• You’ll be confident with numbers, organised enough to manage four operations effectively and charismatic enough to bring teams with you.
• Above all, you’ll have high standards, strong opinions and the ability to turn both into results.
