Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. The essence of this combination makes up much of Fallows DNA, where conscious culinary creativity meets hospitality experience and passion. Fallow’s permanent home in St James’s market was established in November 2021 and has since attracted a string of awards including both the Marie Claire and GQ ‘sustainable restaurant of the year’ and the Caterer award for ‘best new restaurant’.
As a Demi Chef de Partie at Fallow, you will support the smooth running of a designated section of the kitchen, working alongside our experienced chefs to deliver dishes of the highest quality. This is a fantastic opportunity to gain hands-on experience in one of London’s most innovative, sustainability-focused restaurants, where seasonality and creativity shape everything we do.
Key responsibilities:
- Assist with the preparation and cooking of dishes within your section, ensuring quality and consistency.
- Work under the guidance of your Chef de Partie to maintain high culinary standards.
- Support with stock rotation, storage, and ingredient ordering in line with purchasing guidelines.
- Keep your section clean, organised, and efficient at all times.
- Collaborate with the wider kitchen team to deliver a seamless dining experience.
- Ensure food safety, hygiene, and health & safety standards are upheld.
About you:
- Experience as a Demi Chef de Partie or strong background as a Commis Chef in a high-quality, fast-paced kitchen.
- A genuine passion for sustainability, seasonality, and innovative cooking techniques.
- Strong attention to detail and commitment to delivering excellence.
- A team player with good communication skills.
- Positive, proactive, and eager to learn and grow within the team.
