Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. The essence of this combination makes up much of Fallows DNA, where conscious culinary creativity meets hospitality experience and passion. Fallow’s permanent home in St James’s market was established in November 2021 and has since attracted a string of awards including both the Marie Claire and GQ ‘sustainable restaurant of the year’ and the Caterer award for ‘best new restaurant’.


As a Prep Chef at Fallow, you will play an important role in supporting the kitchen team by ensuring ingredients are prepared to the highest standard and that your section is fully organised and ready for service. This is an excellent opportunity for a passionate and motivated chef to develop their skills in one of London’s most innovative, sustainability-driven restaurants, where seasonality, creativity, and responsibility are at the heart of everything we do.


Key responsibilities:

  • Prepare ingredients to the required standards, including chopping, peeling, portioning, weighing, and basic cooking.
  • Support the wider kitchen team with preparation and other day-to-day kitchen operations.
  • Maintain high standards of cleanliness, organisation, and food presentation throughout the kitchen.
  • Follow recipes, preparation methods, and portion-control guidelines accurately.
  • Assist with stock rotation, storage, labelling, and checking deliveries.
  • Minimise food waste and follow Fallow’s sustainability practices wherever possible.
  • Ensure all food is handled and stored safely in line with food safety and hygiene standards.
  • Work collaboratively with the kitchen team to ensure a smooth and efficient service.
  • Support senior chefs with additional tasks as required.


About you:

  • Previous experience in a professional kitchen is desirable, ideally within a high-quality or fast-paced environment.
  • A genuine passion for food, cooking, seasonality, and sustainability.
  • Good understanding of basic food preparation and kitchen practices.
  • Strong attention to detail and pride in producing consistent, high-quality work.
  • Organised, reliable, and able to work efficiently in a busy kitchen environment.
  • A positive and proactive attitude with a willingness to learn and develop.
  • A strong team player who communicates well and supports colleagues.
  • Good understanding of food safety, hygiene, and health & safety standards.
