Conscious & creative dining in the heart of Wood Wharf from the trio behind Fallow restaurant. Named after native deer of the British Isles, Roe will follow the same nose-to-tail and root-to-stem ethos as its critically acclaimed sister restaurant, Fallow St James’s.

The extensive a la carte menu will be divided into nibbles and flatbreads, skewers, and grilled options, with larger plates and sides also available. As well as championing modest, British ingredients, Roe’s dishes will showcase underused and underappreciated produce.


We are looking for a skilled and motivated Pastry Junior Sous Chef to join our pastry team. As a key member of the department, you will support the Head Pastry Chef in the daily operation of the pastry kitchen, ensuring the highest standards of quality, creativity, and consistency. This role is ideal for someone with strong technical ability, excellent organisation, and a passion for refined pastry work.


Key responsibilities:

  • Assist the Head Pastry Chef in overseeing the day-to-day operations of the pastry kitchen.
  • Lead and supervise the pastry team during service, ensuring smooth production and exceptional output.
  • Maintain high standards in all pastry preparation, baking, and presentation.
  • Contribute creative ideas and support menu development under the guidance of the Executive and Head Pastry Chefs.
  • Ensure strict adherence to food safety, hygiene, and cleanliness standards.
  • Manage mise en place, stock rotation, and assist with ordering to ensure efficient and cost-effective operations.
  • Support training and development of junior pastry staff, fostering a positive and collaborative working environment.
  • Work closely with other kitchen teams and front-of-house to ensure cohesive and timely service.


About you:

  • Experience as a Pastry Sous Chef, Pastry Chef de Partie, or similar position within a 5-star hotel, Michelin-starred restaurant, or high-end dining environment.
  • Strong technical pastry skills, with a passion for precision, creativity, and continuous improvement.
  • A proven ability to work efficiently in a fast-paced and quality-driven kitchen.
  • Strong communication and organisational skills, with an eye for detail.
  • A team player with a positive attitude and a commitment to maintaining an excellent kitchen culture.
  • Eagerness to develop professionally and contribute to an innovative pastry programme.
