Conscious & creative dining in the heart of Wood Wharf from the trio behind Fallow restaurant. Named after native deer of the British Isles, Roe will follow the same nose-to-tail and root-to-stem ethos as its critically acclaimed sister restaurant, Fallow St James’s.
The extensive a la carte menu will be divided into nibbles and flatbreads, skewers, and grilled options, with larger plates and sides also available. As well as championing modest, British ingredients, Roe’s dishes will showcase underused and underappreciated produce.

As Senior Sommelier, you will play a key role in shaping our wine program and guest experience, working closely with the Head Sommelier to lead our beverage team and curate an outstanding selection that complements our culinary vision.
Key responsibilities:
- Lead the wine service with confidence, offering expert guidance and engaging recommendations to elevate the guest experience.
- Collaborate with the Head Sommelier to develop and maintain a dynamic, diverse, and sustainable wine list that reflects Roe’s philosophy.
- Oversee inventory management, cost control, and reporting to ensure the financial success of the wine program.
- Mentor, train, and inspire the sommelier and front-of-house teams, fostering a culture of continuous learning and excellence in hospitality.
- Support menu development through thoughtful wine pairings and beverage innovations.
- Uphold the highest standards of service, professionalism, and product knowledge across all aspects of the dining experience.
About you:
- Proven experience as a Sommelier or Senior Sommelier in a fine dining or Michelin-level environment.
- Strong knowledge of global wine regions, varietals, and producers, with a passion for sustainability and innovation.
- WSET Level 3 or higher (or equivalent certification/experience).
- Exceptional communication and interpersonal skills, with a natural ability to connect with guests and lead a team.
- A collaborative mindset, proactive approach, and a commitment to excellence in every detail.
